I've made kale chips twice in the past 2 weeks. They aren't very nice to look at but they are so good!!
The first time I made them, Meg and I had this conversation:
Meg: (looks at plate) I don't like that.
Me: You don't even know what it is.
Meg: (walking away...) What is it?
Me: kale chips
Meg: chips??? (makes a u-turn and immediately grabs one to taste).
Meg and Katie both like them. Here's the recipe:
1 bunch kale, woody stems removed and torn into chip-sized pieces
1 T. oil
1 t. kosher/sea salt (resist the urge to put more on!)
Coat kale with oil in a bowl, then lay pieces flat on a baking sheet. Bake 10 minutes at 350. Be sure not to burn them - they should be crispy but not brown.
